Vegetable Kurma

Ingredients :

¼ cup

Cauliflower small florets

Potatoes

Carrots

Beans
¼ cup  Peas
2 Onions
½ cup  Yoghurt

To grind :

6 Green chillies
1" Ginger
4 Garlic small cloves 
1 tsp  Coriander seeds
4 tbsp Grated coconut
1" Cinnamon stick
½ tsp  Anise seeds
½ tsp  Poppy (khus khus) seeds
Cashew Nuts
Cloves
1 Cardamom pod
1 Coriander leaves small bunch
Salt - to taste

Instructions :

Cut the vegetables into small cubes and cook them with salt. Heat 2 tbsp of oil in a frying pan and add the onions and sauté till transparent. 
Add the ground paste and fry for a few minutes. Add the cooked vegetables and a cup of water and boil for 4 to 5 minutes - after it has cooled down add the yoghurt. Variation Instead of yoghurt, use ¼ to ½ cup of tomato puree. You may garnish the kurma with coriander leaves after it is done in which case you don't need to grind it along with the spices.
